Zoodles with Avocado Pesto

Serves 1 (easily can be doubled for 2)

Ingredients:

2 zucchinis

1 whole avocado

1 tbsp lemon juice

2 garlic cloves

5 fresh basil leaves

1/2 tsp sea salt

black pepper to taste


Start by spiralizing your zucchinis using a Julienne peeler. Set aside.

Now prepare your sauce. Scoop flesh from the avocado out and place into food processor.

Add lemon juice, garlic, basil leaves, and salt to processor.

Process until smooth and creamy. Top zoodles with sauce, season with salt and pepper.


Green Power Veggie Plate

with aglio olio (olive oil garlic sauce)

 

Green Power Veggie Plate

Serves 2


Ingredients


1 cup uncooked brown rice

2/3 cups cooked chick peas

2 zucchinis

1 cup mini squashes

4 kale leaves (destemmed, only use leafy part)

2 tblp extra virgin olive oil

10 garlic cloves

sea salt and black pepper to taste


Add brown rice to pot with 2 cups water, bring to boil. Reduce heat and simmer until all water is absorbed and rice is fully cooked.

Meanwhile heat olive oil in skillet on medium heat. Mince garlic and add to skillet. Saute until fragrant but not burned.

Cut zucchini into half rounds. Do not cut mini squash. Add both to skillet, saute for 10 minutes, vegetables should soften.

Destem your kale and add to skillet along with the chick peas. Mix well so kale and all vegetables are coated in the olive oil and garlic. Saute for another 10 minutes. Kale should be soft but NOT wilted. Remove from heat. Generously season with salt and pepper.

Serve on top of the prepared brown rice. Godere!! (enjoy)


Vegan Chocolate Mylkshake


Serves 1 (easily can be doubled for 2)


2 frozen bananas

1 cup almond milk (or other non dairy milk)

2 medjool dates

1 heaping tblp cocoa powder

1/2 tsp maca powder (optional but adds awesomeness!!!)


Add all ingredients to high speed blender. Blend until smooth.

Pour and indulge in this creamy chocolate shake!


Note- Bananas need to be frozen or shake will not come out thick and ice cream like.

Maca powder is a superfood powder that I recommend reading about. This powder compliments the chocolate flavor very well!
